Warming up for the Holidays...

Nothing warms us up better this time of year than an awesome bowl of soup! Here's our favorite go to recipe for homemade roasted butternut squash soup. It's delish and easy to make, and perfect for Thanksgiving too!

-1 pkg Trader Joes Butternut Squash (pre packed already cut up cubes)
-1/2 cup Organic Vegetable Stock
-2 Tbsp extra virgin olive oil
-1-2 pieces of fresh sage
-1 Tbsp sea salt
-1 tsp cinnamon
-1/2 onion
-5-6 small crackers (optional)



Serves 4-6 people (well for us, probably 2 people...we keep going back for more!)

Place butternut squash cubes on a cookie sheet, spread olive oil and sea salt all over cubes.
Toss it all around by hand to coat all cubes as much as possible.
Roast in oven at 375 for about 20-25 min (until squash is tender)
Meantime, while squash is roasting, cut up 1/2 an onion and sauté with a bit of olive oil & a pinch of salt until onion is tender and translucent.



Once cubes are roasted, place all squash in a blender with sauteed onions and vegetable stock. Pour veg stock a little at a time to determine the consistancy that you'd like and blend until pureed.

Serve hot in a pretty bowl topped with a pinch of cinnamon, a few leaves of fresh sage,
and  your favorite flavored crackers!




So warm and cozy, and perfect to take away the chill of the day!
